
Ingredients:
6 Pieces of boneless of pork tenderloin, thinly slice
1 small can of mushrooms / 1 cup of fresh mushrooms
1 cube / 1 tablespoon of butter
4 cloves of garlic
3 tablespoon of caper
1/4 cups of lemon juice
1/2 can of chicken broth
2 tablespoon of white wine
1/2 cup of bread crumb (Italian style)
1/2 cups parmesan cheese powder
1 cup of all purpose flour
2 eggs
Garnish with: ~
fresh cilantro /parsley
sliced green onion
Preparation:
Season the pork slices with chicken powder, pinch of salt and black pepper about 30 minutes or overnight!!!
Combine the all purpose flour, parmesan cheese powder and Italian Herb bread crumb and set aside. Crack the eggs and beat well, after done put all the pork inside and mix well. When done, get piece by piece and coated with flour mixture.
In a large fry pan over medium high heat, warm the 3 tbs or more the vegetable oil and pan fried the pork slices, turning once until golden brown. About 2 minutes per side. Adding more oil into the pan between batches as needed. Remove from the pan and set aside.

Set the pan over medium heat and the pour 1 tbs of olive oil and 1 cube of butter! Pour in the garlic and stir fry till it aroma. After that add the mushroom and capers to stir fry together and then put the 1/2 cup of chicken broth in skillet that you just cooked the pork in (to "deglaze" the pan) and scrape ip the brown bits on the skillet. Squeeze the lemon juice into this mixture, reduce the heat to medium and let the sauce reduce by about half. Throw in your capers and sauce is done! Give it a quick taste to see if you think you need more lemon juice or some pepper (carefully, it will obviously be hot). When the sauce is done, you can put the pork slices back into skillet and cook about 2 mins or more. Then serve immediately!!!
Side dish:
Sauteed Potato
8 medium size potato
2 clove of garlic
1 tablespoon of butter
1 teaspoon of dry thyme
1 teaspoon of black pepper
1 teaspoon of dry oregano
1 teaspoon of chicken powder
1st, boil the water and cook the potato! Then drain the water out when it done cooking. After that, heat the pan in medium heat and pour in the 1 tbsp of butter and fry the garlic till get aroma. Add in the potatoes and stir fry... when it turn to little golden brown, sprinkle the chicken powder, thyme, black pepper and oregano. When it is done, you may serve it as a side dish with your Pork Scallopini with Lemon Capers Sauce.
